Hi! This is Andrea from Cooking with a Wallflower. I’m back this month to share with you guys a brand new drink perfect for summer brunch.

If you’re like me, I’m obsessed with mimosas. On the occasion that I have time for brunch with family and friends, I always order a mimosa. There’s something about the simplicity of orange juice and champagne that pairs perfectly with breakfast and catching up with friends. Especially on a warm summer morning.

So, today, I wanted to share with you a slight twist to my favorite brunch drink. This Sparkling Matcha Mimosa has a little bit of bubbly champagne, fresh squeezed orange juice (or store bought for convenience), and a simple match brew. So delicious and so refreshing. If you’re a fan of both matcha and mimosas, then this drink would be perfect for you.

Sift matcha powder into a small bowl to prevent clumps. Add a little bit of hot water and whisk until all the matcha has dissolved. Set aside for now.

In a tall glass, pour orange juice first to create the bottom layer. Next, add enough ice so that the ice is above the orange juice. Pour the champagne into the glass so that it hits the ice. This helps with the layered effect.

Add more ice to the glass so that the ice sits above the champagne. Pour the matcha brew into the glass so that it hits the ice. Add more ice if desired.

Serve the sparkling matcha mimosa cold with a lime wedge.

Hope you’ll enjoy this drink as much as I have.
